Commercial lecithins (mixtures of phospholipids) are available in several physical states. Commercial lecithin can be produced as an oily liquid (lecithin + vegetable oil), a powder (deoiled lecithins) or water emulsion. Powder form is obtained by treatment oily lecithin by the alcohol or acetone.
